• Replace up to one-half of the granulated sugar called for in any recipe with honey.

• Substitute honey for all of the sugar in some recipes.

• Reduce the liquid called for in the recipe by 1/4 cup for each cup of honey used.

• Add 1/2 teaspoon baking soda for each cup of honey used in baked goods.

• Reduce oven temperature by 25 degrees to prevent over-browning when honey is added.







• The ingredients in honey are water, pollen, fructose, glucose, organic acids, proteins and enzymes.

UNPASTEURIZED HONEY

"Raw" honey that has not been heat treated and will crystallize more quickly. Crystallization is most rapid at 14 degrees celsius and can be reversed by heating.

PASTEURIZED HONEY
Honey that is heat treated to delay crystallization, thus destroying enzymes and pollens.

CREAMED HONEY
Creamed honey is a pasteurized hone processed by controlled crystallization to yield a product with a smooth, spreadable consistency.
